TORONTO, ONTARIO -- (Marketwired) -- 05/01/14 -- Colette Grand Cafe, the newest addition and third restaurant in the Chase Hospitality Group's (CHG) impressive roster, is now under construction in the Thompson Toronto. The Grand Cafe will occupy the space that was previously home to Scarpetta, on the ground floor with extensive renovations expected to be complete in June 2014.
Steven Salm, President of CHG, took his inspiration for Colette Grand Cafe from the timeless boulangeries and cafes that line France's city streets. "I'm thrilled to introduce Colette into the King West district, and to provide the community with an authentic French experience that is representative of some of the most inspiring culinary establishments in Europe," stated Salm.
The 5,000 square-foot restaurant, designed in tandem by CHG and Audax Architecture, will include a dining room with seating for 100, a library, a lounge, a bakery counter, and a bar. The greatest challenge in the design process, according to Gianpiero Pugliese, Architect/Principal at Audax, was creating a space with an authentic old-world European feel inside the modern glass facade of the Thompson Toronto.
To create a "turn of the century French space, interpreted into a contemporary context," Pugliese and his team designed impressive barrel vault ceilings to differentiate areas within the Cafe. Hand-painted tile in traditional Parisian hues - blues, yellows, and whites - will line the bakery walls, and warm lighting will hang above classic French cafe-style seating.
The construction and design at Colette will complement executive chef Michael Steh's vision for the menu, inspired by the refinement and technical processes that define French cooking.
