The Ritz-Carlton, Half Moon Bay Announces In the Kitchen Schedule for Fall 2014

Enjoy Legendary Cooking Classes and Unforgettable Experiences at a Luxury Half Moon Bay Resort

HALF MOON BAY, CA -- (Marketwired) -- 06/02/14 -- The Ritz-Carlton, Half Moon Bay announces dates and class offerings for the fall season of In the Kitchen with Chef Kevin Tanaka. The monthly demonstration-style cooking classes highlight seasonal fare sourced from the renowned farms surrounding the coastal resort.

August 2, 2014
Stone Fruit and Organic Chicken
The class explores the possibilities of what you can do with stone fruits other than just eating them raw or making them into jam or jelly. Chef Tanaka will demonstrate how they are perfect for relishes, pickling, purees and gelees. During the class, Chef Tanaka will also demonstrate how to roast the perfect chicken and show guests just how easy it really is to have the chicken come out with a nice crisp skin and perfectly moist meat every time.

"Try making a chicken salad with leftover roasted chicken and adding diced peaches or cherries," explained Tanaka. "The sweetness from stone fruit pairs perfectly with the roasted chicken," he added.

September 6, 2014
Halibut and Fall Mushrooms
Halibut is one of our more popular items on the menu in our hotel restaurant, Navio. In this class, our Half Moon Bay fine dining experts will demonstrate how to get the perfect sear on the fish. Guests will learn about mushrooms as they look beyond the traditional mushrooms and go in depth with the locally foraged mushrooms that come from King of Mushrooms located in South San Francisco.

October 4, 11, 18 and 25, 2014
Pumpkins, Pumpkins and Pumpkins
Half Moon Bay is the Pumpkin Capitol of the World. The Pumpkin, Pumpkin, Pumpkin class highlights creative ways to incorporate pumpkin into a menu. Chef Tanaka reviews the different varieties of pumpkins and outlines the best use for each type including which varietal makes the best soup, the perfect pasta or ravioli filling, or a flavorful curry dish.

"We source all our pumpkins from Farmer John's Pumpkin Farm right here in Half Moon Bay," notes Chef Tanaka. "Farmer John grows about 11 different varieties of cooking pumpkins including Red Kuri, Kabocha, Sugar Pie, and Cinderella, and each pumpkin has its own characteristics," added Tanaka.

In the Kitchen classes are $85 per person, inclusive of tax and gratuity, and are held in Navio from 11 a.m. to 1 p.m. The program includes a three-course lunch with wine paired by Petra Polakovicova, the luxury resort's sommelier.

Additional In the Kitchen classes include:

  • November 1: In the Kitchen with Turkey and Root Vegetables
  • December 6: In the Kitchen with Dungeness Crab and Pears

Kevin Tanaka is the Restaurant Chef in Navio at The Ritz-Carlton, Half Moon Bay. Navio features approachable flavors that highlight the best of coastal dining from all around the world and boasts exceptional seafood dishes, all in a comfortable California-inspired design. Navio is uniquely positioned to hyper-locally source produce from the many farms in the Half Moon Bay area. Chef Tanaka enjoys going to the farms and picking fresh produce and herbs, and then incorporating them into the menu that evening. The Half Moon Bay chef brings his own philosophy to the menu at Navio. He grew up in Hawaii, a melting pot of many cultures, so his cooking is nothing short of ordinary. In fact, he describes his own cooking style as "French meets Pacific Rim with a California farmer's market influence."
